Whether it is raining or snowing in your part of the country, these are great recipes to try on a cold winter's eve.


Cornmeal bread

1/2cup whole-kernel stone ground cornmeal
1/2cup all purpose flour
1/4cup wheat flour
2 level tablespoons sugar
1 teaspoon salt
2 teaspoons baking powder
1/4 to 1/3 teaspoon baking soda
1/3 cup vegetable oil
2 Tbs mashed tofu
2 tablespoons melted butter
2 cup soy milk mixed with juice of one lemon,

Grease pan with olive oil

Pre-heat oven to 375°F.


Mix dry ingredients together; mix in and soy buttermilk. Bake until table knife stuck in center of the skillet comes out clean the bread is done.
Turn out onto a warm plate and serve.

Vegan Sopa de Albondigas
Soup
4 cups water
2 tablespoons vegetable oil.
1 small onion, chopped
1 tsp garlic salt
1/4 cup cilantro chopped finely
2 zucchini, cubed
4 carrots, cubed
2 tomatoes, cubed
2 tspMckay's vegetarian chicken seasoning
3/4tsp salt
In a large soup pot over medium heat 2 tablespoons vegetable oil. Add onion and saute until soft, about 5 minutes. Add the Garlic, Zucchini, Carrots and Tomatoes and cook, stirring, until fragrant, about 5 minutes. Add water, salt and the Mckay's vegetarian chicken seasoning, stir well and bring to a boil. Carefully slip the meatballs into the pot, reduce the heat to low and simmer uncovered until the meatballs are fully cooked, about 45 minutes.

Meatballs

1 cup breadcrumbs, cubed
1 cup mushrooms, finely chopped
2 Tbs tofu, mashed
3/4 cup pecans, ground
2 Tbs flour
1/4 cup oil
1Tbs onions, finely chopped
1 tsp thyme
1 tsp oregano
1 tsp garlic salt
Salt to taste

Saute mushrooms and onions in olive oil. Add thyme, garlic salt and oregano and mix thoroughly. Stir in mashed tofu and ground pecans. Add flour and salt. Form small balls.
