HOUSE AND HOME THE KITCHEN
STOLLEN
5 cups flour, sifted
2 Tbs yeast
1 cup warm soy milk
1 cup brown sugar
2 Tbs tofu
1cup melted butter
1 cup candied citron
1 cup brown raisins
1 cup golden raisins
2 cups of white grape juice
1 cup slivered almonds
1 tsp nutmeg
1 tsp vanilla
1 tsp cinnamon
Soak raisins and candied citron in grape juice
Mix 2 tablespoons of yeast with ½ cup of warm soy milk and 2 Tbs of
brown sugar, allow yeast to rise. While yeast is rising, blend the rest of
the soy milk with the tofu in a blender.
Allow yeast to double in size and then add the rest of the sugar, the melted butter, blended tofu, almonds, and soaked fruit, nutmeg, vanilla, and cinnamon; mix thoroughly. Add flour one cup at a time, mixing thoroughly each time the flour is added. Knead the mixture and allow the dough to rise until it double in size. Cut into pieces and form loaves. Bake in the oven at 400F for 30 minutes or until golden brown. Brush hot bread with butter and sprinkle with powdered sugar.
