Basic Eggless French toast
1 cup tofu
3 small dates
2 Tbs olive oil
1 lime juiced
12 slices whole wheat bread
pinch of salt
Preheat oven to 350 F
Liquefy tofu and dates in blender.
Add olive oil slowly. Add lime juice and pinch of salt
Pour mixture into an open bowl and dip slices of bread lightly into the mixture.
Grease the bottom of a flat baking pan, and lay dipped
slices of bread in the pan.
Bake for 30 to 35 minutes or until golden brown.
Serve with fruit preserves, jam or jellies of your choice.
Delightful variations to the above recipe include the addition of crushed macadamia nuts, crushed almonds, walnuts or cashew nuts to the mixture in which the bread is dipped.
Cantaloupe Tray
Cut a Cantaloupe in half
Using a small scoop, scoop out small balls from the interior of the cantaloupe.
Add pineapple cubes, orange wedges and chopped banana as desired. Garnish with grapes.
