HOUSE AND HOME THE KITCHEN
After a hard day of work or play, Is there anything better, on a cold wintry night, than a steaming bowl of soup? Choose either of the following recipes; put the ingredients in the crock pot and when you return home in the evening, add a salad, fruit and whole grain bread. Voila! Dinner.
Potato Soup
8 Potatoes
2 onions chopped
1/4 cup olive oil
1 cup mashed Tofu
1 Tbsp mock chicken seasoning
2 Tbsp parsley dry
2 tsp oregano
8 cups water
salt to taste
2 cups milk (may substitute soy milk)
2 Tbsp flour
Place all ingredients, except for milk and flour, in the crockpot Cook all day on low to medium.
Thirty minutes before serving potato, mix milk and flour thoroughly.
Pour this mixture into crock pot. Continue to cook slowly for the next thirty minutes. Serve hot.
Lentil Soup
2 cups Lentils
1 Onion chopped
3 Celery stalks chopped
2 Tbsp Tomato paste
1 tsp Oregano
1 tsp Garlic powder
1 bayleaf
7 Cups water
2/3 Cup olive oil
1 Tbsp vegex
Salt to taste
Place all ingredients in crock pot and cook on low for eight hours
Serve hot.
